Instructions

Preheat the oven to 350°F.

Pop your cookie sheets in the fridge before pressing for cleaner shapes.

Prepare 2 large baking sheets with a sheet of parchment paper.

Note: Use the empty butter wrappers to grease the pans first so the parchment stays flat.

Ensure your butter and egg are at room temperature for a smoother dough.

In a large bowl, beat together butter and sugar until fluffy.

Mix in egg yolks and vanilla and almond extract into the sugar mixture.

Don’t forget to scrape down the sides of the bowl.

Slowly add in the remaining dry ingredients and mix until incorporated and a dough forms.

Tips For Making Spritz Cookie Recipe for a Cookie Press

  • Ensure that your butter is softened at room temperature. Soft butter ensures a smoother and more easily pressed cookie dough.
  • Cookie presses come with various discs or tips for shaping the cookies. Choose the one that appeals to you, and make sure it’s securely attached to the press.
  • If the dough becomes too warm while you’re working, it can affect the consistency and make it challenging to press. Pop the dough back in the refrigerator if needed.
  • Make sure your cookie press is clean and free from any leftover dough before starting a new batch. This ensures consistent shapes.
  • Press the cookies onto parchment paper-lined or an ungreased baking sheet. Greased sheets may cause the cookies to spread too much.
  • Hold the cookie press perpendicular to the baking sheet and press down firmly. Lift straight up to avoid distorting the shape.
  • Leave enough space between cookies on the sheet to allow for slight spreading during baking.
  • If the dough is too soft and the cookies don’t hold their shape, add a bit more flour. If it’s too stiff and hard to press, add a small amount of liquid.
  • If baking multiple sheets, rotate them halfway through the baking time to ensure even baking.
  • Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack. Baked cookies firm up as they cool.
  • Experiment with your festive cookies with creative variations. Add a burst of freshness with lemon extract or lemon zest, use a teaspoon rum extract or chopped almonds for a nutty twist, or infuse warmth with ground spices like a teaspoon ground nutmeg and a teaspoon ground cinnamon.

Do You Decorate Spritz Cookies Before Baking?

It’s a common practice to decorate spritz cookies both before and after baking, depending on the desired effect. Before baking, you can add decorative elements such as colored sugar, sprinkles, or nonpareils to the cookies. This allows the decorations to adhere to the dough during baking, creating a festive appearance.

After baking, you can add icing or additional decorations. Royal icing, colored icing, or melted chocolate can be applied to the cooled cookies to create intricate designs, patterns, or personalized touches.

FAQs

Why do my spritz cookies taste like flour? ›

Improper flour measurement is the #1 cause of your cookie dough being too dry or the cookies tasting like flour.

Why are my spritz cookies not sticking to cookie sheet? ›

The ungreased cookie sheet must be cold for the dough to adhere. If the dough will not stick to the pan, try placing the cookie sheet in the freezer for a few minutes. Do not use parchment paper or a Silpat mat. The dough will not stick when pressed.

Should you use parchment paper when baking spritz cookies? ›

*Don't use non-stick cookie sheets as spritz cookies need to stick to the pan! *Also don't grease the sheets or use parchment paper. Spritz cookies release easily when made right!

Why are my spritz cookies tough? ›

Simply adding the flour to the stand mixer and beating it in runs the risk of overdeveloping gluten and giving you a tough or dense cookie (not what you want after all that work with the creaming). Instead, the best method is to add the flour and mix it in by hand, stopping as soon as no dry flour remains.

Why did my spritz cookies go flat? ›

Kitchens tend to heat up during any baking extravaganza, meaning the butter you leave on the counter to soften might get too soft. If this happens, the butter will melt faster in the oven and your cookies will flatten before they can set. Thirty minutes is usually enough counter time to soften butter.

Should Spritz cookie dough be sticky? ›

Sticky dough usually means your dough is too soft. Try chilling it for a few minutes or add 1 teaspoon of sifted flour to your dough until the proper consistency is achieved.

What do overmixed cookies taste like? ›

Overmixing your batter can lead to runny cookies.

I mixed the batter more than I should have both during the creaming stage of the recipe and after adding the flour. As a result, the cookies came out light and airy, and I was able to taste the butter more prominently in this batch than in others.

How to keep spritz cookies from spreading? ›

Chilling cookie dough helps prevent spreading. The colder the dough, the less the cookies will over-spread into greasy puddles. You'll have thicker, sturdier, and more solid cookies. Whenever I make cookies, I plan ahead and chill the cookie dough overnight.

What is the best cookie sheet for spritz cookies? ›

Insulated Cookie Sheets

Pros: Cookie sheets are insulated to prevent the bottoms of the cookies from browning too much or too quickly and are ideal for when you're baking thin or delicate cookies, or treats should be lightly colored, such as spritz cookies and shortbread.

When making spritz cookies do you decorate before or after baking? ›

If you decide to use icing make sure the cookies are cooled completely before decorating them and don't add any sprinkles before baking. This spritz cookies recipe bakes quickly so keep an eye on them, you don't want them to brown they should just be starting to turn ever so slightly golden at the edges.

What is the problem with the cookie press? ›

A frustratingly frequent issue with using a cookie press is not being able to extrude the dough or the dough sticking to the die-cut disc, yielding a misshapen cookie. The culprit in both of these cases is the temperature of the dough. The ideal temperature for dough is between 65 and 75 degrees Fahrenheit.

Why did my spritz cookies spread in the oven? ›

Too much sugar, too much butter, or too little flour can all contribute to cookies that are on the run. (In the case of cookies that spread no matter how careful you are preparing the dough and/or the baking sheets, I'd probably turn to another recipe.)

How do you get decorations to stick to spritz cookies? ›

Decorating spritz cookies jimmies, sugars or nonpareils.

If you add sprinkles after baking the cookie dough your sprinkles will not stick to your cookies without using melted candy or icing. Oftentimes, shaped sprinkles will melt in the oven so sticking with jimmies, sugar and nonpareils are best.

How do you use a cookie stamp press? ›

For crispest stamping designs, chill dough for at least 3 hours. Roll dough into balls slightly larger than golf ball size. Using cookie stamp, center over ball and push down until dough starts to squeeze out around stamp. Slowly lift/remove stamp.

How to use a biscuit maker machine? ›

Turn the upper knob until the toothed side is in the same direction as the lever. Lower the lever a few times until the dough comes out evenly from the holes of the extruder. Remove the dough that has come out from the extruder. Rest Biscuits directly on the clean baking tray, without adding butter or parchment paper.
