Who doesn't like some potato wedges? Golden-brown, hot, delicious, oh heavens above! The are the perfect side for any roast, burger, and anything meat, and are way more delicious than any take-away wedges. And a lot healthier too.

Baked in the oven with just a little bit of oil makes them nice and crispy on the outside, but fantastically tender on the inside. And that lovely spicy coating with paprika and garlic granules, a super winner!

I used regular paprika, but spicy paprika or smoked paprika would also be a great choice if you want to give them a spicy kick. Also, cayenne pepper or just some chilli pepers would work well here.

Any seasoning is great, and you can play with quite a few in order to achieve the level of spiciness you are after. Or just a nice flavour.

A few tricks, and you get to enjoy some seriously yummy potato wedges every single time. I don't bother peeling the potatoes, but I do give them a good rinse before cutting them.

  • make sure to pat dry the potatoes after rinsing them

We want them completely dry before coating them with oil and spices. This will ensure they stay crispy and they bake evenly.

  • cut the potato into wedges, add them to a freezer baking together with the oil and seasoning, and give the bag a good shake to ensure an even coating
  • don't overcrowd the baking tray, otherwise the wedges will be way too soft, and not crispy on the outside
  • bake at 220 degrees Celsius, 430 Fahrenheit
  • the wedges should be ready in about 35 minutes, but do keep an eye on them every so often, and give them a good shake

A side dish for everything

Baking is the way to go when it comes to potatoes, any way shapes or sizes. MyCrispy Baked Fries are a regular side with us, my kids love them, and are so much healthier and tastier than some greasy take-away fries.

Both the wedges and fries are just perfect when it comes to a good side for any roast, burgers, scampi, and so on. With the Superbowl just around the corner, why not give them a try? I can guarantee a smashing success.

My children love homemade spicy potato wedges and would love the flavours you've got on these. Smoked paprika is just gorgeous on wedges I think and I find these days if I make plain wedges or unflavoured chips my children complain so I'm always looking for different ideas for flavourings.

Does soaking potatoes in water make them crispier? ›

Soaking the sliced potatoes in water helps to draw out some of the starch from the middle of the potato, resulting in a sturdier, crispier French fry.

What does cornstarch do to potatoes? ›

When the corn starch comes into contact with the hot oil, it forms a barrier that traps moisture within the potato while also developing a crunchy crust. This results in fries that are both tender on the inside and crispy on the outside, mimicking the texture of fries you might find in restaurants.

How long should you soak potatoes for fries? ›

Allow them to soak, 2 to 3 hours. (You can also stick them in the fridge and let them soak overnight.) When you're ready to make the fries, drain off the water and lay the potatoes on 2 baking sheets lined with paper towels. Blot with paper towels to dry them.

How do you keep crispy potatoes crispy? ›

Keep potatoes crisp in a warm oven if you're serving them in 1-2 hours. If there is a slight wait before everyone eats, don't cover the crispy potatoes—this traps steam which will make the potatoes soggy. Just keep them in the oven, but turn the temperature to the lowest setting.

Why do you soak potato wedges in ice water? ›

Soaking potatoes in water helps remove excess starch. Excess starch can inhibit the potatoes from cooking evenly as well as creating a gummy or sticky texture on the outside of your potatoes. Cold water is used because hot water would react with the starch activating it, making it harder to separate from the potatoes.

Why are my potatoes soggy and not crispy? ›

Roasted potatoes can become soggy if the water content in the potato isn't fully cooked. Different potatoes have different water content percentages. Also, be mindful of the oil. Potatoes can react like sponges; too much oil can make your potatoes appear to be soggy.

Why homemade potato chips are not crispy? ›

The difference lies in their starch content and structure. Waxy potatoes are amazing for boiling as they keep their shape, but floury potatoes fry up crisper. Use a floury (also called mealy) potato such as Russet or Shepody for your chips and you'll have better success.

Why are my potato fries not crispy? ›

If they are still not crispy you might have skipped a step or you might not have let them cool down sufficiently. Make sure to cool them in a single even layer and also make sure that the oil has the right temperature. Or maybe you've used the wrong potatoes to make them.

Why are my fries soggy and not crispy? ›

Fries have a very high starch content. When they are cooked at high temperatures, they absorb moisture which gives them their signature crispy exterior. When they are left out to cool, the starches secrete moisture, which eventually makes the fries' crust soggy.
