Pulled Pork Nachos

When a Loaded Pulled Pork Nachos craving hits you at 10 pm at night, you just gotta go for it sometimes.

Main Ingredients Needed

This Pulled Pork Nachos recipe is a super good one that requires a bit of chopping while waiting for the cheese to melt over pulled pork, beans and chips… *drool* Here’s everything you’ll need to make this quick and tasty dish:

  • Pork –I used a Kroger Carnitas Seasoned Pork which was easy to prepare. But you could also make pulled pork from scratch. It’s a great use for leftovers! If you have a smoker, you MUST try my Smoked Pork Butt recipe.
  • Yellow Corn Tortilla Chips –pick your favorite brand, you’ll need a whole bag of it.
  • Mexican Blend Cheese –shredded. You could also just use cheddar if you don’t want to add a specialty brand of cheese.
  • Black Beans and Corn –both canned and drained which makes this recipe even more simple.
  • Cilantro, Red Onion, Tomatoes, and Lime –all that chopping comes from these fresh ingredients that add so much flavor to the dish.
  • Guacamole and Sour Cream –these are optional but recommended! So yummy!

How to Make Pulled Pork Nachos

  1. Start by laying out everything you’ll need for these Loaded Pulled Pork Nachos. (Let’s pretend I remembered to put the can of corn in this photo, ok?)
  2. The main star of this recipe is this pre-made Pork Carnitas. I saw them when I was browsing ClickList for fun (because that is seriously what I consider fun these days…) Oh man, are they good. Just reheat according to package directions and shred into small pieces. I suppose you could cut it, but I like the shredded look.

  1. Layout an entire bag of yellow corn chips (Simple Organic Brand is what I used) onto a parchment paper-lined baking sheet.
  2. Cover those chips with lots of cheese and the shredded pulled pork.
  3. Like so! Also, sprinkle on the black beans and the corn and then the remaining cheese.

Looking good, right?

  1. So we will put these into a hot oven to melt the cheese completely. Watch it carefully 🙂 We aren’t using the broiler because that would just melt the top layer of cheese and we want it to melt ALL of the cheese evenly.

  1. The fresh ingredients you’ll be topping these with red onion, cilantro, tomatoes, and lime wedges. Prepare while the pulled pork nachos are baking.
  2. Then, once the nachos are done and the cheese is completely melted, add those fresh toppings and serve immediately.

Hello, gorgeous!!

Recipe Links and Tips

(some affiliate links below)

  • I really like my half sheet pan for this pulled pork nachos recipe. It is the perfect size for the number of chips in the 9 oz. bag of Simple Truth Organic Chips.
  • The knife I used to cut all my veggies pictured above is from Fred Meyer! The line is called ‘Dash of That’ and these new home goods and kitchen products are going to be available in-store soon! Keep your eyes peeled!
  • Don’t use the broiler for this recipe! The top layer of cheese will melt perfectly, but the bottom layer won’t before the top is all dried out. Bake it at a high temperature, and this will solve your problem 🙂
  • For easy cleanup, use my good friend parchment paper! I will never go without parchment paper.
  • I used a cookie scoop to add my guacamole and sour cream to the middle of my pan of nachos. Feel free to just serve on the side. It’s probably just as good, though not as pretty 😉

FAQs

How do you keep loaded nachos from getting soggy? ›

* Bring refrigerated toppings to room temperature before piling them onto the warm chips. * To prevent the chips from getting soggy, sprinkle grated or crumbled cheese on top and bake them in the oven for a few minutes. When melted, the cheese will act as a buffer between the chips and toppings.

What is the secret to crispy nachos? ›

Limiting the number of ingredients baked with the chips is the key to crispiness. Top chips with no more than two or three toppings. Choose from items such as black beans, refried beans, chopped grilled chicken, seasoned ground beef (browned and drained), or chopped jalapenos.

What is the secret to pulled pork? ›

Skim the fat off the top of the cooking liquid. For more moist and flavorful pulled pork, you can mix some of the cooking liquid back into the pork. Start with a little, mix, then add more until the pork is as wet or dry as you like. Alternatively, for barbecue pulled pork, you can mix in barbecue sauce.

What do loaded nachos contain? ›

Layers of chips, saucy meat, beans, cheese and salsa give these sheet pan nachos lots of texture and all the right flavors. To make them vegetarian, omit the beef and double the beans.

What is the best cheese to melt for nachos? ›

Sharp cheddar gets my vote for nacho cheese. It melts smoothly without being stringy, while having a nice flavorful punch. You can use mild or medium cheddar if you prefer, but the flavor will be a bit blander. Monterey jack and pepper jack also melt really well into sauces and make a great white nacho cheese sauce.

Do you put meat or cheese first on nachos? ›

For better coverage, spread a single layer of tortilla chips, then scatter a minimal layer of your melting cheese of choice, making sure to coat the chips on the edges. Bake in a 300-degree oven until the cheese has melted, then scatter your beans or meats and vegetable toppings over the cheese.

What is the best liquid to cook pulled pork in? ›

Transfer everything to a large slow cooker and add a splash of liquid — water is great, but so is broth, apple juice, or beer if you have them handy. Cover and cook on low until the meat is tender and pulls apart easily.

What liquid keeps pulled pork moist? ›

Additionally, spray chicken broth or apple juice on the meat to prevent it from losing more moisture in the crockpot. To add a strong flavor during the process, white wine can also be sprayed.

Why add soda to pulled pork? ›

Cola typically has a pH of about 2.7—for comparison, lemon juice has a pH of 2—making it acidic enough to break down some proteins without dissolving your meat. Soda acts as great tenderizer—you could get a tender cut of meat grill-ready in less than a half-hour.

What's the difference between loaded nachos and nachos? ›

Nachos with an abundance of toppings are sometimes called "loaded nachos". This type of dish is usually served as an appetizer at bars or restaurants in the United States and elsewhere.

Are nachos better in the oven or grill? ›

The cooking method

Drummond "nukes" the nachos in a microwave and the NYT grills them, but the best results, I find, come from baking, which heats the dish all the way through without making the base layer soft and chewy.

How do you keep tortilla chips from getting soggy? ›

One of the best ways you can keep them fresh is by ensuring they're stored in a dry place — totally away from any moisture. From tortilla chips to potato chips and everything in between, you also want to make sure the bag they're contained in remains tightly sealed.

Will nachos go soggy in the fridge? ›

Storing Leftover Nachos

One should remove any cold toppings, such as salsa and sour cream, which can make the chips soggy when refrigerated. Placing the leftovers in the refrigerator promptly after the meal will minimize the risk of spoilage.

How do you keep nacho cheese from getting watery? ›

Consistency. If too runny, add an extra ¼ cup of shredded cheddar cheese and a bit more evaporated milk. Do not use pre-shredded cheese as it is coated to keep it from being sticky and inhibits its ability to melt.
