This post is sponsored by The National Pork Board. I'm always a little skeptical of new-age kitchen tools and appliances. But the more I use my Instant Pot, the more it amazes me. The time save is huge as you probably know but, wow, saving that much time while still being able to put a super-tasty dinner on the table is so important these days. This pork chili with beans and rice took 30 minutes to cook not including time to get the pressure up to speed. I reckon it would have taken twice that time in the regular oven, because I kept my chunks of pork on the larger side. This is a hearty dish perfect for the chilly weather we're having right now. After my recent trip to Illinois with The National Pork Board, I've been paying much more attention to pork as a great substitute for any of the other proteins. It's lean and healthy with a 3.5oz piece providing almost 26 grams of protein. It’s also well priced and can be used in so many different recipes. This easy slow cooker pulled pork is perfect on some brioche buns with a spicy slaw. Or you could make dinner extra special and go with my stuffed pork loin and apple stuffing. Either way you won’t be disappointed!

Do I need a lot of ingredients for this recipe?

The majority of ingredients you'll need are spices and seasonings including the following.

  • Pork loin
  • Onion
  • Tomatoes
  • Stock
  • Kidney beans
  • Diced chilis

Why do I need to sear the pork first?

Searing any kind of meat ensures that the juices stay inside the meat and doesn’t dry out. You’ll also benefit from extra flavor as the outside of the pork becomes caramelized.

What are the best cuts of pork for the Instant Pot?

Most cuts will work fine in your IP but when it becomes done will be determined mostly by time. My pork loin took 35 minutes and it was perfectly tender. Pork shoulder or sometimes called pork butt, will take longer but makes the best pulled pork or carnitas.

How am I able to tell when my pork is fully cooked?

After releasing the pressure and taking the lid from the Instant Pot, scoop one of the chunks of pork from the pot and tear it in half with a fork. If it breaks up easily then your pork chili is ready!

What can I serve this pork chili with?

You can eat it as it is straight from the Instant Pot and It’ll be almost like a soup. I prefer to ladle it over some brown rice to soak up all of the liquid. You can add any of the traditional toppings like grated cheese, sour cream, green onions and of course cornbread on the side. It really is the perfect dinner.

Ingredients

  • 2 pounds boneless pork loin
  • 2 tsp ground cumin
  • 1 tbsp chili powder
  • 1 tsp paprika
  • 2 tsp dried basil
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/4 cup vegetable oil divided
  • 1/2 large onion diced
  • 1 tbsp minced garlic
  • 1 28oz can diced tomatoes
  • 1/2 cup chicken or beef stock
  • 1 15oz can kidney beans drained
  • 1 4oz can diced chilis
  • 2 tbsp cornstarch
  • 2 tbsp water

Instructions

  1. Cut the pork into chunks about 1-2 inches in size and transfer to a bowl.
  2. In a small bowl combine the cumin, chili powder, paprika, basil, salt and pepper.
  3. Toss the pork with the seasoning.
  4. Set your Instant Pot on sauté mode and add 2 tbsp of the vegetable oil.
  5. Once the oil is hot add half of the pork and sear for a couple of minutes. Transfer to another bowl and repeat with the remaining pork. Set pork aside after searing.
  6. Add the remaining oil to the pot and then add the onions stirring for 1 minute.
  7. Add the garlic and stir.
  8. Pour the full can of tomatoes into the pot along with the stock, beans and chilis.
  9. Add the pork and stir well.
  10. Set the Instant Pot to meat setting and cook for 30 minutes at high pressure.
  11. After 30 minutes, release the steam and open the pot.
  12. Stir and test a piece of the pork, it should be tender and fall apart. If not it may need another 5 minutes.
  13. Once the pork is done combine the water and cornstarch until dissolved.
  14. Add the cornstarch mixture and using the saute setting stir for 1-2 minutes until the chili thickens.
  15. Serve over rice with fresh cilantro.
